A local wine shop in Frome has begun distilling its own gin.
Givino, based on Commerce Park, has launched its own range of small-batch gins, starting with Rhubarb and Ginger.
Run by Robbie and Jamie Lymer, Givino will specialise on producing small batches of around 8-10 bottles each month using seasonal ingredients.
“We have spent a long time focusing on the wine side of the business, but as we are Givino (gin and vino) we thought it was about time that we focused on the gin now!” said Robbie.
“It’s great that we have such a strong local customer base and the feedback has been amazing with our first batch selling out in five days!
“Every month will be a different recipe to reflect the seasonal botanicals. We will be using locally grown produce as much as we can; for example the rhubarb came from my parents’ garden and next month we will be making an apple and blackberry gin, so we will be off blackberry picking soon!”
Robbie and Jamie had to apply for a distilling licence before they could start and then spent a day with Richard from Retribution Distilling in Mells who talked them through the distillation process.
“We use his locally-made neutral base spirit and he very kindly gave us loads of hints and tips!” said Jamie.
“We add the botanicals and this is then distilled in our copper pot still. We check the distillate every 50ml to check for quality and taste and we’ve chosen to make it in a dryer style than is normal to make us stand out from others.”
The gin is available exclusively from Givino’s shop at Commerce Park or through its website, with each batch limited to around eight to 10 bottles.
The small-scale production is intended to give customers the opportunity to see the copper still in operation if they visit while a batch is being made.
“This makes the gin a bit more special than just buying it from a shelf,” added Jamie.
Givino also plans to expand its range with a navy strength gin at 57% ABV, which is due to launch in September.
